Hi jivatts,
If your colored design is a raster image (i.e. photo), when you right click on the image you will see the Edit Using Photo Workshop option in the menu that drops down. Select that option, select the Adjust Color tab, then click on the Make Black & White button.
If your colored design is a vector image (i.e. clipart), when you right click on the image you will see the Advanced Graphic Editor option in the menu that drops down. Select that option to open Advanced Drawing, then manually change each color of the image.
Or, you could just set your printer to print in Black and White only.
