After I create a label and choose 'ConvertTo Full Avery Sheet....", it converts but destroys the label I have created.

Do not use "Convert to Full Avery Sheet" unless you want your full design to bleed off onto adjacent labels. When doing a label project, there is usually no need to do such a conversion.
