how do you save a custom template, one of you're own creating?

Although you can't add a new stock to the list of templates, you can create your custom project, then save it with a descriptive name. Then whenever you want to use that template, browse your PrintMaster Projects and select it. Remember to Save As, so you don't overwrite this "template".
